Recipes - Detoxifying Daikon Salad
Boost your liver's detox power with this easy daikon-carrot salad! Packed with nutrients and perfect for meal prep 🌱💚
Daikon is packed with detox-supporting nutrients like glucosinolates, which boost liver enzyme activity for detoxification. It’s also a good source of vitamin C for antioxidant protection, fiber for digestion, and potassium for heart and blood pressure and healthy electrolyte balance.
Carrots 🥕are another favorite of mine for their beta-carotene, which converts to vitamin A, supporting immune, eye, and skin health.
When daikon is in season, I meal prep this salad weekly, often doubling the ingredients. I usually have 2 tbsp every day, sometimes more since it’s hard to stop eating it! Yes - it’s that good.
Pro tip: Pair this with cooked broccoli to boost its detox power! Raw daikon introduces myrosinase, an enzyme that helps create sulforaphane, broccoli’s well-known detox and anti-inflammatory hero! For this reason, I try to pair cooked broccoli with some 🌿 raw cruciferous veggies all the time 🥦
Ingredients
Half a medium-sized daikon radish, peeled then grated or spiralized into thin strands (yields around 1.5 cups, packed)
1 large carrot - grated or spiralized (I do not peel it, I buy organic and scrub it well)
1 tablespoon coconut sugar
1 tablespoon organic rice vinegar (or apple cider vinegar)
1 teaspoon organic toasted sesame oil
a handful of roasted sesame seeds
1 tbsp coconut aminos (this is a lower sodium option. You can also sub it for 1 tsp salt if you don’t have this ingredient)
1/4 cup cilantro, finely chopped (or green onions)
Depending on the size of your daikon and carrots, you may need to add more salt to taste, so when everything is mixed together, give it a taste and see if you need to add more salt to suit your taste buds!
Instructions
Grate or spiralize the carrot and daikon into thin strands.
Transfer them into a mixing bowl.
Toss in sugar, rice vinegar, sesame oil, sesame seeds, and cilantro; mix well and let sit for 10 minutes,
Taste - if it feels bland, add extra salt, mix thoroughly again.
This will keep in the refrigerator for 3-4 days, depending on your refrigerator. It is delicious in a sandwich (think Banh-Mi 😋), add it straight into a salad for an instant upgrade, or just on the side to accompany your cooked cruciferous veggies to multiply that detox power!
